Modified veggie chili recipe from "The Complete Vegetarian Cuisine". A solid weeknight meal that gets better the next day.

Directions

  1. Heat oil in a large saucepan and sauté the onion and peppers for 10 minutes. Add the garlic and cook for 1–2 minutes.
  2. Add corn and greens, then add tomatoes.
  3. Add all spices.
  4. Cook for at least an hour to let everything meld.
