Modified veggie chili recipe from "The Complete Vegetarian Cuisine". A solid weeknight meal that gets better the next day.
Directions
- Heat oil in a large saucepan and sauté the onion and peppers for 10 minutes. Add the garlic and cook for 1–2 minutes.
- Add corn and greens, then add tomatoes.
- Add all spices.
- Cook for at least an hour to let everything meld.
